I agree totally with your picks of Maiden and Priest. They are the true foundations of today's metal. Even on Slayer's first album, Show no Mercy, the song "Cryonics" sounds very heavily influenced by Iron Maiden and Judas Priest. Glenn and KK, Adrian and Dave are Gods. DragonForce obviously have two great guitarists but the songs they play are too messy and random. Its like there showing off instead of creating good riffs. And, for the record, Old doesnt mean crap, Maiden are Awesome!
